Makes 4, 4oz servings

 Ingredients:

  • 2 tsp Dijon mustard
  • 1 clove garlic, minced
  • ¼ tsp lemon zest
  • 1 tsp lemon juice
  • ½ tsp honey or agave
  • ¼ tsp kosher salt (optional)
  • 3 tbsp panko breadcrumbs
  • 3 tbsp finely chopped walnuts
  • 1 tsp extra-virgin olive oil
  • 1 lb salmon fillet
  • Olive oil spray
  • Chopped fresh parsley, optional

Instructions:

  1. Preheat oven to 425 degrees F. Line a large rimmed baking sheet with foil.
  2. Combine mustard, garlic, lemon zest, lemon juice, honey and salt in a small bowl.
  3. Combine panko, walnuts and oil in another small bowl.
  4. Place salmon on the prepared baking sheet. Spread the mustard mixture over the fish and sprinkle with the panko mixture, pressing to adhere. Lightly coat with cooking spray.
  5. Bake about 8-12 min, until salmon flakes easily with fork.
  6. Sprinkle with parsley if desired.
