Southwest Chicken Salad

Finding a nutritious, filling lunch that actually tastes good can be a challenge. Heavy meals leave you sluggish, while skimpy salads leave you hungry an hour later. The Southwest Chicken Salad solves this dilemma by combining bold Tex-Mex spices, lean protein, and fiber-packed vegetables into a vibrant, deeply satisfying power lunch.

Here’s how to make it:

 

Serving Size: 6-8 servings.

Ingredients for salad:

  • 4 c chicken, cooked & diced
  • 4 c romaine lettuce
  • 1 (15oz) can black beans, rinsed & drained
  • 1 c frozen corn, thawed
  • 1 c grape tomatoes, halved
  • 1 medium red bell pepper, diced
  • 1/4 c cilantro, chopped
  • 1 c reduced-fat Mexican-style shredded cheese (optional)

Ingredients for dressing:

  • 1 c non-fat, plain Greek yogurt
  • zest of one lime
  • juice of 3 limes
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp honey
  • 2 tsp cumin
  • 1/4 cup cilantro, finely chopped
  • 1/4 tsp kosher salt
  • pepper, to taste

Directions:

  1. In a large bowl, add the diced chicken, lettuce, black beans, corn, tomatoes, red pepper, onion, and cilantro. Toss to mix.
  2. In a small bowl, add yogurt, lime juice, zest, olive oil, honey, cumin, cilantro, and salt. Whisk to combine.
  3. Add half of the dressing to the salad, and stir well. Add more dressing, salt, and/or pepper to taste.
  4. If using cheese, sprinkle on top and toss before serving.
