So Simple Overnight Oats
Recipe by Carmen Weber, RDN, CDN
Serving Size: Makes 1 large or 2 small servings.
Ingredients:
- ½ c old fashioned rolled oats
- 3/4 c milk of choice
- ¼ c low- or no-fat plain Greek yogurt
- 1 Tbsp chia seeds
- 0-1Tbsp maple syrup or honey
- ½ tsp vanilla extract
Directions:
- Add all ingredients to a glass jar with tight fitting lid.
- Stir until well combined, ensuring chia seeds are mixed in well.
- Alternatively, mix in a small bowl and transfer to a container with tight-fitting lid.
- Refrigerate for at least 4 hours but preferably overnight. So simple!
Note: Delicious cold but can be warmed slightly if preferred. This makes a satisfying breakfast as is, but the flavor combinations are endless. Experiment with different toppings or add-ins to keep it interesting every day! Top the base recipe with any nuts, seeds and/or fruit just before eating, or stir add-ins into the mix before refrigerating.
Other flavor combination ideas:
🍎🍇Apple Raisin Pecan: Mix in 1/4-½ cup small-diced apple, 1 Tbsp raisins, ½ tsp cinnamon and 1-2 Tbsp chopped pecans. Top with additional apples and raisins before eating.
🫐🍋Blueberry Lemon: Mix in ½ cup lightly mashed blueberries and 1 tsp lemon zest. Top with additional blueberries and lemon zest before eating.
🍋🟩🥧Key Lime Pie: Mix in 2 Tbsp reduced fat cream cheese, 2 Tbsp lime juice, ½ tsp lime zest, 1 crumbled graham cracker. Top with additional lime zest and a graham cracker.
🥜🍌Peanut Butter Banana: Mix in 2 Tbsp natural peanut butter and ¼ cup diced banana. Top with additional drizzle of peanut butter and few banana slices.
