Ladolemono Sheet Pan Chicken

Serving Size: 6-8
Ingredients for chicken & veggies:
- 1 lg red onion, halved and sliced into 1/2-inch pieces
- 1 med zucchini, halved and sliced into half moons
- 1 lg orange bell pepper, cored and sliced into 1/2-inch strips
- 1 lg tomato, cut into wedges
- Pinch of salt
- Several grinds black pepper
- 6-8 boneless skinless chicken thighs
- 1/4 c pitted Kalamata olives and/or Castelvetrano olives (optional)
- 4 oz feta cheese, in chunks
- 1/4 c chopped Italian parsley
Ingredients for ladolemono (Greek sauce):
- Juice of 2 large lemons (~1/4 c)
- 1 1/2 tsp dried oregano
- 1 lg garlic clove minced
- 1/4 tsp salt
- 3/4 tsp black pepper
- 1/3-1/2 c extra virgin olive oil
Directions:
- Preheat oven to 425°F.
- In a small mixing bowl or liquid measuring cup, add the lemon juice, oregano, garlic, salt, and pepper and whisk vigorously to combine. Add the olive oil and continue whisking until emulsified.
- Add the onions, zucchini, peppers, and tomatoes into a large mixing bowl. Pour about 1/4 cup of the sauce all over the veggies. Toss to coat, then spread the vegetables in a single layer onto a large rimmed baking sheet.
- Season the chicken on both sides with a pinch of salt and pepper then nestle the chicken, olives if using, and chunks of feta in between the vegetables and drizzle with the remaining sauce, making sure the chicken is covered.
- Bake on the center rack of the oven until the chicken is cooked through to an internal temp of 165F, about 35 minutes. For more color, transfer to a higher oven rack and broil for a couple of minutes, watching closely so it does not burn. Transfer from pan to serving dish,
sprinkle with parsley and serve.
