Roasted Garlic White Bean Dip

Roasted Garlic White Bean Dip is a delicious, nutritious, and versatile dish that can elevate any appetizer spread or serve as a wholesome snack. Packed with flavors, it’s easy to make and can be enjoyed in various ways. Here are several benefits of incorporating roasted garlic white bean dip into your diet.

Here’s how to make it:

 

Serving Size: 6-8

Ingredients:

  • 1 {15oz} can cannellini beans, rinsed & drained
  • 2 whole heads of garlic
  • Juice of one lemon
  • 3 tsp + 3 tbsp olive oil, divided
  • 1/2 tsp salt
  • 2 tsp fresh rosemary, finely chopped

Directions:

  1. Preheat oven to 400F.
  2. Leaving heads of garlic intact, cut the top 1/4” – 1/2” off. Sit both heads on a piece of aluminum foil big enough to make a packet to roast them in. Drizzle 1 1/2 tsp of olive oil over the top of each head. Cover the garlic with foil, folding loosely over the heads, but covering and sealing it entirely. Roast the packet on a pan in oven for 30-40 minutes.
  3. Add the beans, lemon juice, olive oil, salt, and rosemary to a food processor.
  4. Once garlic is done and cooled, remove from the foil and squeeze the roasted cloves out of their papery shell, into the food processor.
  5. Blend well to desired texture. Taste and add more salt if needed.
  6. Serve with veggies, pita chips or crostini.
