Highly Satiating, Peanut Butter Stuffed Dates

Serving Size: Makes 10
Ingredients:
- 10 Medjool dates, pitted
- Peanut Butter (without added sugar)
- Optional: dark chocolate shavings, mini choc chips, coconut flakes, pinch of coarse sea salt
Directions:
- Use a knife to gently slice open the dates.
- Using a small spoon or knife, place about a tsp of nut butter inside the date.
- Serve immediately or store in the refrigerator in a sealed container for a week or more.
NOTE: Rethink your dessert! These are SO simple and super delicious! The chewy consistency of the dates is reminiscent of caramel, which is why they are often described as “nature’s caramel.” Perfect with two basic ingredients, but if desired, get creative! Use any nut or seed butter you like. Try topping them with mini chocolate chips, a sprinkle of coconut, dark chocolate shavings, or a tiny pinch of sea salt. For a candy bar effect, dip them in melted dark chocolate and refrigerator allowing chocolate to set.
