Tomato cucumber salad is a simple, yet incredibly nutritious dish that offers a range of health benefits, making it a perfect addition to a balanced diet. Here’s how to make it:

 

Serving Size: 5-6

Ingredients for Salad:

  • 3 large ripe tomatoes, chopped
  • 1 English cucumber, sliced or diced
  • ½ medium red onion, thinly sliced
  • 1-2 tbsp fresh basil, chopped
  • 1-2 tbsp fresh parsley, chopped

Ingredients for Dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 small clove garlic, finely minced
  • 1/8 tsp black pepper
  • Pinch of salt

Directions:

  1. In a small container with tight fitting lid, add EVOO, vinegar, garlic, pepper and salt. Shake vigorously to combine.
  2. In a medium bowl, add tomatoes, cucumber, red onion and herbs.
  3. Drizzle dressing over salad and toss well. For better flavor, refrigerate at least 15 minutes before serving.
