Almond Crusted Baked Chicken

Serving Size: 4 (4oz each)
Ingredients:
- Cooking spray
- 1 c dry roasted almonds
- ½ c grated parmesan cheese
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried parsley
- ½ tsp black pepper
- 1 egg, lightly beaten
- 1 tbsp water
- 1 lb chicken cutlets
Directions:
- Preheat oven to 425F. Place a baking rack on top of a rimmed sheet pan and spray the rack with nonstick cooking spray.
- Place the almonds in a food processor and pulse into fine crumbs. Place almond crumbs into shallow bowl and add the parmesan cheese, onion powder, garlic powder, parsley and pepper. Mix to combine.
- In a separate bowl, add the egg and water, whisking to combine.
- If needed, pound cutlets to ensure equal thickness, then pat dry with a paper towel.
- One at a time, dip a cutlet into the egg mixture, letting excess egg drip off, then placing in crumb mixture, pressing as needed to coat well on both sides.
- Place each coated cutlet on the prepared baking rack.
- Spray the chicken with a bit of the cooking spray then bake on center rack in oven for 18-20 minutes, gently flipping the chicken halfway through.
- Chicken should have an internal temperature of 165F and coating should be golden and crispy.
