The Power of Nutrition Month

March is National Nutrition Month®,

and at RVNAhealth that means something very practical – real nutrition support happening right here in our community!

RVNAhealth Carmen Weber Registered DietitianLeading the way is Carmen Weber, RDN, CDN, Registered Dietitian at RVNAhealth, who brings nearly 25 years of experience helping people understand how food supports everyday health. What makes her work especially meaningful is how she brings nutrition off the page and into daily life through community presentations, one-on-one guidance, and hands-on learning in the RVNAhealth Teaching Kitchen.

At RVNAhealth, nutrition is not theoretical. It is lived, practiced, and shared.

Where Nutrition Becomes Real Life

Carmen’s work centers on helping people make food choices that truly fit their lives… their health needs, their schedules, and their budgets. She provides individual nutrition counseling for people navigating chronic conditions, changing health concerns, or simply wanting clear, realistic guidance about what to eat and how to make it sustainable.

But one of the most visible and beloved parts of her work happens in the RVNAhealth Teaching Kitchen, where she leads monthly cooking classes that turn nutrition into something you can see, smell, taste, and actually do.

These classes are designed for real people cooking real meals. Carmen demonstrates how to prepare balanced dishes using accessible ingredients and practical techniques. Participants learn how to simplify meal planning, adapt recipes for specific health needs, cook efficiently, and build meals that support energy, strength, and overall wellbeing.

There is always conversation. Always questions. Always shared learning. And of course, tasting.

Many people leave with something even more valuable than recipes… confidence. Confidence to cook, to try something new, and to make healthy eating feel manageable rather than overwhelming. Over time, these monthly classes create momentum. People return, learn new skills, and gradually build habits that support long-term health.

The Mediterranean diet is consistently celebrated as one of the healthiest eating patterns in the world. While it isn’t strictly vegetarian, its foundation is rooted in vibrant plant foods — meals centered around vegetables, fruits, herbs, legumes, nuts, and whole grains. Seafood, dairy, poultry, and eggs are enjoyed in moderation, complementing the abundance of plants on the plate.

Join us as we explore and prepare a delicious, plant-forward Mediterranean meal. Featuring a touch of seafood and dairy, we’ll let fresh, seasonal ingredients truly shine. We’ll discuss the nutritional benefits of each ingredient and simple swaps you can use when recreating these dishes at home.
Come ready to learn, prep, cook, and savor a flavorful, meatless Mediterranean feast. Leave full and with all the recipes.

Class max: 8 attendees. $55 per person. 10% discount until March 6. Use code: EARLYBIRD
