How to make a Berry Spinach Salad

Ingredients:

  • 6 cups spinach
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced
  • ½ cup  walnuts
  • ¼ cup crumbled goat
  • cup olive oil
  • cup balsamic vinegar
  • ½ tbsp honey or agave
  • 1 small clove garlic, minced

 

Directions:

  1. In a skillet over medium-low heat, toast the walnuts until golden and fragrant. Set them aside to cool at room temperature.
  2. Rinse the berries, then add them along with the spinach and toasted walnuts to a large bowl.
  3. In a small container with tight fitting lid, add the olive oil, balsamic vinegar, honey and garlic. Shake vigorously to blend well. Drizzle dressing over the salad and stir to combine. Sprinkle goat cheese over top and toss lightly. Serve immediately.
