Banana Oatmeal Breakfast Cookies

Banana Oatmeal Breakfast Cookies may sound like an indulgent treat, but they deliver a whole-food approach to morning fueling and long-lasting energy. Old fashioned oats, creamy peanut butter, and overripe bananas are loaded with essential nutrients that support everyday wellness. They are especially rich in soluble fiber and complex carbohydrates, which support gut health, regulate blood sugar levels, and help manage cholesterol. They are also an excellent source of heart-healthy plant fats, potassium, and omega-3 fatty acids from chia seeds, providing clean energy without relying on refined sugars or butter. Here’s how to make it:

 

Serving Size: Makes 8-10 Cookies

Ingredients:

  • 1 ½ cup old fashioned oats
  • ½ c creamy peanut butter
  • 2 overripe bananas
  • 1 tsp vanilla
  • 3 tbsp chia seeds
  • 2 tbsp add-ins (optional)

Directions:

  1. Preheat oven to 350F. Line cookie sheet with parchment paper.
  2. Begin by mashing bananas then add the rest of the ingredients to a large bowl.
  3. Mix well so all combined.
  4. Form onto into 8-10 cookies by rolling into balls then pressing slightly, keeping them ½”-3/4” thick.
  5. Bake on middle rack in oven for 12-14 minutes.
  6. Allow cookies to cool.

Note: These cookies will remain very soft and stay fresh in an airtight container for up to a week. Depending on the cookie size and cookie eater, these can make a healthy on-the-go breakfast, snack or even dessert. Experiment with your favorite add-ins, such as dark chocolate
chips, raisins or dried cherries.
