Artichoke Garden Flatbread Pizza Appetizer

Artichoke Garden Flatbread Pizza is a culinary bridge between the comfort of traditional flatbreads and the profound nutritional density of the Mediterranean diet. By replacing heavy, processed meats and excessive cheeses with a vibrant array of plant-based toppings, this dish transforms a standard meal into a functional tool for digestive health, cardiovascular support, and antioxidant protection.

Here’s how to make it:

 

Serving Size: 2, or 6 as an appetizer

Ingredients:

  • 2 whole wheat pitas or naan
  • Extra virgin olive oil
  • 6 oz part-skim ricotta cheese
  • 6 oz crumbled feta cheese
  • Dried oregano
  • 7 oz marinated artichoke hearts, drained well and sliced
  • Baby spinach, handful
  • 1 Roma tomato, halved then sliced
  • 1 small shallot, thinly sliced
  • Sun-dried tomato bits

Directions:

  1. Preheat the oven to 375F.
  2. Place pitas on a baking sheet lined with parchment paper. Lightly brush with extra virgin olive oil. Spread the ricotta cheese and feta cheese on each
    pita and top with a generous sprinkle of dried oregano, then arrange the remaining ingredients on top. Sprinkle with more dried oregano, if you like.
  3. Place the flatbreads in the oven and cook 5-7 minutes or until warm and pita is slightly crisp.
  4. Remove from heat, slice and enjoy!
